The Birria Taco

The Birria taco is unique in that it can be classified as a taco filling and also a stew.  The dish originates from Jalisco, Mexico.  It started out as a meat stew traditionally made from goat meat and then eventually beef.  This stew is one that speaks to the soul as comfort food often does.  Having this option as a taco is simple with complex flavors.

Birria tacos served at El Taco Santo Ahwatukee are served on corn tortillas as the flour tortillas fall apart. The birria taco filling is made from beef that is marinated before being cooked for many hours in a broth.  A consome is created from the broth and served along with the birria tacos.  This consome serves as a dipping sauce for the tacos.  Many Mexican restaurants in Mexico that serve birria will serve a plate of dry prepared meat and then pour the broth over it.  It can then be used to make tacos.

Our recommendation to enjoy the best birria tacos is to go the traditional route of adding fresh chopped onions, a favorite salsa, shredded cabbage, cilantro, and a squeeze of lime.  All of these are available in our fresh self serve salsa bar.
