Cochinita Pibil tacos are one of our traditional Mexican recipes from the Yucatan Peninsula. They start out with the pork being marinated in acidic citrus juices. Then, after some additional recipe items are added, it is slow roasted for many hours allowing the flavors of the ingredients to fuse in quite nicely with the meat.
Out of all of our pork tacos available on our menu, cochinita pibil is the “wet pork” option due to the manner in which it is prepared. This meat is served on the corn tortilla, but as always, you are able to request flour tortillas for any of our menu items.
Some favorite side dishes that are normally paired with the cochinita pibil tacos is red pickled onions, refried black beans, and habanero chilis. El Taco Santo Ahwatukee will be adding the red pickled onions option to the self serve salsa bar in 2021, so please check back with us if you miss having that as a topping.
